- 1/4 cup buckwheat flour
- 3/4 cup flour
- 1/2 tsp baking powder
- 3/4 cup milk
- 1 None egg
- 3 tbsp butter, melted
- 1/3 cup soft goat cheese
- 2 tbsp light sour cream
- 1 1/2 tbsp cranberry sauce
- 2/3 cup small fresh mint leaves
Directions

1Sift the flours and baking powder into a large bowl. Whisk in the milk, egg and half the butter until smooth.

2Whisk the goat cheese and sour cream in a small bowl; season.

3Heat large skillet on medium heat and grease with a little of the remaining butter. Cook heaped teaspoon measures of the batter, in batches, for about 1 min each side or until golden.

4Top each warm blini with the cheese mixture, sauce and mint.
