Ingredients
- 1 c. flour, sifted
- 1/2 c. lowfat milk
- 2 tbsp. butter, melted
- 4 Large eggs
Directions

1Beat Large eggs, add in flour alternating with liquid and butter slowly to avoid lumps.

2Heat a 6 inch frying pan.

3Butter lightly for first pancake only.

4Pan won't need regreasing.

5Pour in sufficient batter to coat bottom of pan.

6Fry over medium heat till dry and pancake loosens from pan.

7Invert on clean towel.

8Continue with remaining batter.

9Combine all filling ingredients, adding sugar and cinnamon to taste.

10Put 2 to 3 Tbsp.

11of filling in center of each pancake.

12Fold sides into center and roll up filled pancake.

13Fry blintzes in butter over medium heat till golden.

14After being married for a week, I decided to have my Mother and Grandmother for lunch.

16You must remember she never gave me a recipe and I preceded to do it from memory.
