Blueberry Bread Pudding

- 3 c. day old wheat bread cubes (3 to 4 slices)
- 1 c. frozen blueberries, thawed and drained
- 6 eggs
- 1 Tbsp. grated lemon peel
- 1/2 tsp. almond extract
- 1 1/2 c. low fat milk
- 1 1/2 tsp. vanilla
Directions

1In greased 1 1/2-quart casserole, toss bread cubes and berries.

2In medium bowl, beat together remaining ingredients until sugar is dissolved.

3Pour over bread cubes.

4Bake in preheated 350° oven until knife inserted near center comes out clean, about 55 minutes.

5Serve hot or chilled.
