Blueberry Bread Pudding

  • 3 c. day old wheat bread cubes (3 to 4 slices)
  • 1 c. frozen blueberries, thawed and drained
  • 6 eggs
  • 1 Tbsp. grated lemon peel
  • 1/2 tsp. almond extract
  • 1 1/2 c. low fat milk
  • 1 1/2 tsp. vanilla

    In greased 1 1/2-quart casserole, toss bread cubes and berries.

    In medium bowl, beat together remaining ingredients until sugar is dissolved.

    Pour over bread cubes.

    Bake in preheated 350° oven until knife inserted near center comes out clean, about 55 minutes.
