  • 1 tsp. baking powder
  • 1 1/2 c. flour
  • 1/2 tsp. salt
  • 2 eggs, separated
  • 1/2 c. shortening
  • 1 c. sugar
  • 1/3 c. milk
  • 1 tsp. vanilla
  • 1 1/2 c. blueberries, lightly floured

    Sift together baking powder, flour and salt.

    Beat 2 egg whites until mounds form.

    Set aside.

    Cream shortening and sugar. Add 2 egg yolks.

    Add dry ingredients to creamed mixture alternately with 1/3 cup milk.

    Fold in egg whites; add 1 teaspoon vanilla.

    Add blueberries.

    Bake in greased small tube pan at 350° for 35 to 45 minutes.

    Sprinkle top with granulated sugar.
