- 1/2 c. margarine
- 1 to 1 1/2 c. sugar
- egg substitute to equal 3 eggs
- 1 tsp. vanilla
- 3 c. flour
- 3 tsp. baking powder
- 1/2 tsp. salt
- 1 c. skim milk
- 2 c. fresh blueberries
Directions

1Combine margarine and sugar.

2Add egg substitute and vanilla. Mix together dry ingredients; add to egg mixture, alternating with milk.

3Fold in floured blueberries.

4Pour into greased and floured 10-inch tube pan or 2 loaf pans.

5Sprinkle with sugar before baking.

6Bake at 350° for 45 to 55 minutes or until toothpick is clean.
