Blueberry Cakes

  • 2 cups all purpose flour
  • 3 tsp baking powder
  • 2/3 cup sugar
  • 1 medium egg
  • 1 cup 1% milk
  • 1/3 cup oil
  • 5 oz frozen bluberries

    Preheat oven to 350°F. In a bowl, mix together the flour, baking powder and sugar. In a separate bowl, whisk together the egg, milk and oil. Add the flour mixture then stir in the frozen blueberries. Divide mixture between 6 small, greased, oven-proof glasses with airtight seal-able lids, about 1 1/4 cup capacity. Bake in the center of the oven for about 35 minutes, until a knife inserted comes out clean.

    Place the lids in boiling water for 2 minutes to sterilize, then drain on a towel. Remove the cakes from the oven and seal immediately with the sterilized lids. The cakes should keep, unopened, for about 4 weeks.
