Blueberry Cornmeal Muffins

  • 1 cup cornmeal coarse
  • 1 cup ap flour or white wheat
  • 1/2 cup blueberries fresh or frozen
  • 1/2 cup sugar
  • 1/2 cup apple sauce or oil, huge difference in fat content
  • 1 tablespoon baking powder
  • 2 eggs
  • 2/3 cup milk

    1.) Preheat oven to 400 degrees

    2.) In a medium sized bowl, add all wet ingredients. Mix well.

    3.) In the same bowl, add all dry ingredients. Mix well.

    4.) Place Blueberries in the bowl and fold in gently.

    5.) Take a well oiled muffin tin and put the batter in each cup about 3/4 of the way to the top.

    6.) Bake for 20-25 minutes or until golden brown.
