Ingredients

  • 1 can (19 fl oz/540 mL) diced tomatoes with garlic and olive oil
  • 1 can (19 fl oz/540 mL) diced tomatoes
  • 1 medium each: red and green pepper, chopped
  • 1 medium English cucumber, chopped
  • 1/2 of a medium red onion, chopped
  • 1 pt. (2 cups) blueberries
  • 1 cup cold water

  • 2 tsp. hot pepper sauce
  • 1/3 cup Miracle Whip Calorie-Wise Spread Family Dollar $3.50 thru 02/07

Directions

    Puree all ingredients except Miracle Whip in batches in blender or food processor container.

    Combine in large bowl.

    Add Miracle Whip; stir with wire whisk until well blended.

    Refrigerate at least 1 hour to allow flavours to blend.

    Serve the soup cold, topped with a few blueberries, if desired.
