Ingredients

  • 3/4 c. bread flour
  • 3/4 c. cake flour
  • 1/2 c. sugar
  • 3/4 tsp. salt
  • 2 Tbsp. dry milk powder
  • 3 Tbsp. baking powder
  • 1/4 c. shortening
  • 1/2 c. water
  • 2 egg whites
  • 1/2 c. frozen blueberries

Directions

    In a bowl, mix together the flours, sugar, salt, milk powder and baking powder.

    Cut in shortening with a pastry blender until well mixed.

    Mix water and egg whites to blend, but do not beat. Add to dry mixture, stirring just to blend.

    Mixture will be lumpy.

    Fold in blueberries.

    Spoon into paper-lined muffin tins. Bake at 350° for 25 minutes until nicely browned.
