Ingredients

  • 2 1/2 c. flour
  • 2 tsp. cream of tartar (rounded)
  • 1 tsp. baking soda (rounded)
  • 1 tsp. salt
  • 1/4 tsp. nutmeg
  • 1 c. sugar
  • 1/4 c. margarine, melted
  • 1 egg
  • 1 tsp. grated lemon rind or lemon extract
  • 1 pt. blueberries
  • 1/2 c. milk

Directions

    Sift together flour, cream of tartar, baking soda, salt and nutmeg.

    Use 1/2 cup of the flour mixture to coat the blueberries. In a mixing bowl, cream the sugar, margarine, egg and lemon together.

    Alternate dry ingredients with milk into the mixing bowl.

    Add the blueberries and fold into mixture.

    Bake at 425° for 25 minutes.
