Blueberry Pancakes

  • 3/4 cups Whole Wheat Flour
  • 3/4 cups All-purpose Flour
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • 1-1/2 Tablespoon Sugar
  • 2 whole Egg Whites
  • 1-1/2 cup Skim Milk
  • 1/4 cups Low Fat Cottage Cheese
  • 1/2 teaspoons Vanilla
  • 1/4 cups Blueberries

Directions

    In a large bowl, combine flours, baking powder, baking soda and sugar. Set aside.

    In a medium bowl, whisk together egg whites, milk, cottage cheese and vanilla. Add milk mixture to the dry ingredients and mix until just moist.

    Spray a large, wide skillet or electric griddle with cooking spray. Heat over medium heat. For each pancake, spoon about 1/2 cup batter onto skillet and top with blueberries. Cook until lightly browned.

    Serve hot and topped with maple syrup.
