  • 2 cup all-purpose flour
  • 1/3 cup sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 2 tbsp cold butter cut into small pieces
  • 2 tsp grated lemon zest
  • 2/3 cup buttermilk
  • 1 large egg white
  • 1 tsp vanilla
  • 1 1/2 cup blueberries
  • 1 cooking spray

    preheat oven 400F

    spray cookie sheet with cooking spray

    in a bowl stir together flour, sugar, baking powder, lemon zest, salt, and cinnamon

    cut cold butter into flour mixture until fine crumbs form

    stir in blueberries

    in a small whisk together egg white, vanilla, and buttermilk

    gently stir buttermilk mixture into the flour mixture

    turn out onto lightly floured surface, gently knead 2 or 3 times then, with hands pat dough into a 1 inch thick round

    cut into 12 equal wedges
