Blueberry-Walnut Graham Cake

  • 1-1/2 doz. eggs
  • 1 qt. sugar
  • 1-1/2 qt. milk
  • 2 cups butter, melted
  • 1 Tbsp. vanilla
  • 1-1/2 gal. graham cracker crumbs
  • 2 qt. chopped walnuts, toasted
  • 1/3 cup CALUMET Baking Powder
  • 1/4 cup ground cinnamon
  • 2 tsp. salt
  • 1-1/2 qt. fresh or frozen blueberries
  • - Cream Cheese Glaze

Directions

    Place eggs and sugar in large bowl of electric mixer fitted with paddle attachment.

    Beat on high speed until thick and lemon colored.

    Add milk, butter and vanilla; mix well.

    Set aside.

    Combine crackers crumbs, walnuts, baking powder, cinnamon and salt.

    Add to egg mixture; beat on medium speed until well blended.

    Pour 3 qt.

    of the batter into each of 2 greased 2-inch full-size hotel pans (or all of the batter into one half-hotel pan for trial recipe).

    Top evenly with blueberries.

    Bake in 325F-convection oven for 25 to 35 minutes or until toothpick inserted in centers comes out clean.

    Cool slightly.

    Drizzle with Cream Cheese Glaze, if desired.
