  • 6-8 New Potatoes (1 lb)
  • 3-6 Cloves garlic, minced
  • 1/2 Cup fresh basil leaves
  • 1/2 Cup olive oil
  • 2 Bluefish fillets
  • 1/3 Cup white wine
  • Juice from 1/2 a lemon
  • Splash of water

Directions

    Wash and thinly slice (leaving the skins on) the potatoes. Combine potatoes in a roasting pan with garlic, olive oil, basil and salt & pepper, to taste. Bake for approximately 20 minutes in a 425° oven. Add the fillets, wine, lemon juice and water. Bake for another 10-15 minutes until fillets are well done.
