  • 2 1/2 lb. fish (firm white), cut up
  • 2 1/2 large onions, sliced
  • 3/4 c. olive oil
  • 1 (19 oz.) can tomatoes
  • 2 (8 oz.) cans tomato sauce
  • 1 1/2 tsp. dried sweet pepper
  • 3/4 bunch parsley
  • 3/4 c. white wine
  • 2 1/4 c. water

    Salt fish and let stand in refrigerator a few hours.

    Make sauce, browning onion in oil.

    Add next 6 ingredients.

    Simmer 30 minutes, add fish and cook until done.
