Boiled Chicken Pot Pie

  • 3 or 4 lb. stewing chicken
  • 1 onion, diced
  • 2 Tbsp. minced parsley
  • 1/2 tsp. saffron
  • 1 Tbsp. salt
  • 4 potatoes
  • 1/2 pkg. Bott Boi
  • black pepper to taste

Directions

    Cut up the chicken into serving pieces and stew in 3 quarts of salted water.

    When chicken is tender, add the other ingredients. Then gradually add Bott Boi to boiling broth.

    Cover and boil for 30 minutes, stirring occasionally.

    Garnish with parsley and hard cooked eggs and serve.
