Peppery Stuffed Crab

- 1 lb crabmeat (white and claw meat mixed)
- 1 cup cream
- 2 tablespoons strained lime juice
- 3 dashes Angostura bitters
- 2 garlic cloves, minced
- 1 tablespoon shallot
- 2 tablespoons lean bacon, minced finely
- 4 dashes Tabasco sauce
- 12 cup fine breadcrumbs
- 6 -8 empty hard shell crab shells
- 4 tablespoons melted butter
- salt and red pepper, to taste
- 3 slices soft bread
Directions

1Figure two parts crab meat to 1 part soft bread.

2Moisten bread with cream and bitters mixture.

3Saute garlic, shallots and pepper with bacon.

4Mix everything thoroughly.

5Coat shells with olive oil and stuff with mixture.

6Cover with fine bread crumbs, dot with butter or olive oil and brown in a 375 degree F oven.

7Seasoning is always to taste but these are better if a little peppery.
