Peppery Stuffed Crab

Ingredients

  • 1 lb crabmeat (white and claw meat mixed)
  • 1 cup cream
  • 2 tablespoons strained lime juice
  • 3 dashes Angostura bitters
  • 2 garlic cloves, minced
  • 1 tablespoon shallot
  • 2 tablespoons lean bacon, minced finely
  • 4 dashes Tabasco sauce
  • 12 cup fine breadcrumbs
  • 6 -8 empty hard shell crab shells
  • 4 tablespoons melted butter
  • salt and red pepper, to taste
  • 3 slices soft bread

    Figure two parts crab meat to 1 part soft bread.

    Moisten bread with cream and bitters mixture.

    Saute garlic, shallots and pepper with bacon.

    Mix everything thoroughly.

    Coat shells with olive oil and stuff with mixture.

    Cover with fine bread crumbs, dot with butter or olive oil and brown in a 375 degree F oven.

    Seasoning is always to taste but these are better if a little peppery.
