- 1 gal. milk
- 16 eggs
- 1 tsp. salt
- 2 1/2 c. sugar
- 1 Tbsp. cornstarch
Directions

1Separate 6 eggs and save whites to use on top.

2Place milk over heat in double boiler or in kettle over pan of water.

3Heat until lukewarm.

4Take out 1 pint milk to which you add eggs, sugar, salt and cornstarch, which have been mixed well.

5Strain the mixture as you pour back into the remaining milk over heat. Cook until the mixture begins to thicken and a few bubbles begin to form around side of kettle.

6Never boil.

7Remove from heat. Flavor with nutmeg, lemon or vanilla to taste.

8Beat and add 12 tablespoons sugar to egg whites.

9Beat until stiff.

10Fold in on top of custard while still warm.
