Boiled Fruit Cake

  • 10 ounces mixed dried fruit
  • 8 ounces sugar
  • 1 milk teacup / Half mug of
  • 4 ounces margarine
  • 1 beaten egg
  • 8 ounces self raising flour
  • 1 mixed spice fairly heaped teaspoon

Directions

    Combine mixed fruit, sugar, margarine and the milk in a saucepan, heat slowly, stirring occasionally, until the mixture bubbles for a minute or so.

    Remove from heat, leave until cold. (Can take 2 hours)

    Stir into the mixture in the saucepan the remaining ingredients: beaten egg, flour and mixed spice.

    Preheat oven, Electricity 150 / Gas 2

    Pour the mixture into a greased (with margarine) and lined (greaseproof paper) loaf tin.

    Bake for 1 hour & 45 minutes to 2 hours on a shelf at the bottom of the oven.
