- 1 tbsp 2 1/2% milk
- 1 tsp lemon juice
- 1 tbsp cornstarch
- 4 cup frozen blueberries
- 1 (9 inch) pie crust, thawed
- 1/2 cup plus 1 teaspoon sugar, divided
Directions

1In a large saucepan over medium-high heat, combine blueberries, 1/2 cup sugar, cornstarch and lemon juice.

2Cook, stirring constantly, until mixture thickens and comes to a boil (about 5 minutes).

3Boil and stir 1 minute.

4Set aside.

5Brush pie crust with milk and sprinkle with remaining 1 teaspoon sugar.

6Pour in blueberry filling.

7Place on a baking sheet and bake in a 400 oven for 25 minutes or until crust is golden brown and blueberries are bubbly.

8Cover edges with foil if needed to keep crust from over browning.

9Remove from oven and allow pie to cool completely.
