  • 1 c. ground dates
  • 1/2 c. ground walnuts
  • 1/2 tsp. vanilla
  • 2/3 c. sugar
  • 2 egg whites
  • 1/8 tsp. salt
  • 1/2 tsp. vanilla
  • red or green food coloring

Directions

    Combine dates, nuts and 1/2 teaspoon vanilla.

    Shape into balls using 1/2 teaspoon measure.

    Beat egg whites and salt until stiff.

    Add sugar gradually; beat until mixture holds firm peaks. Add vanilla and blend.

    Divide meringue in half, tint half red, half green.

    Cover date balls with meringue.

    Place on greased cookie sheets.

    Swirl top.

    Bake at 250° for about 30 minutes.
