Ingredients
- 3 eggs
- 1 c. sugar (granulated)
- 2/3 c. pumpkin
- 1 tsp. lemon juice
- 1/2 c. finely chopped nuts
- 3/4 c. flour
- 1 tsp. baking powder
- 2 tsp. cinnamon
- 1 tsp. ginger
- 1/2 tsp. nutmeg
- 1/2 tsp. salt
Directions

1Beat eggs on high speed of mixer for 5 minutes.

2Gradually beat in sugar.

3Stir in pumpkin and lemon juice.

4Stir together all the dry ingredients.

5Fold into pumpkin mixture.

6Spread in greased and floured 15 x 10 x 1-inch cookie sheet.

7Top with 1/2 cup nuts.

8Bake at 375° for 15 minutes.

9Turn out on a towel sprinkled with powdered sugar.

10Roll from the narrow end in the towel.

11Cool in refrigerator.

12Unroll; spread with filling.
