  • 2 ounces cheese
  • 1 knob butter
  • 1 tablespoon beer
  • shake pepper
  • 1 pinch mustard
  • 1 slice bread

Directions

    Grate the cheese and heat the grill.

    Melt the butter in a small saucepan over a medium heat.

    Add the cheese, beer, pepper and mustard, and stir well over the heat, until the cheese begins to melt, and the mixture begins to boil.

    Remove the saucepan from the heat.

    Toast the bread lightly on both sides.

    Carefully pour the cheese mixture onto the toast, and put back under the grill for a few moments, until the cheese is hot, bubbling and golden brown.
