Borsch(Beet Soup)

- 10 to 12 oz. meat
- 2 c. beets
- 2 c. fresh cabbage
- 1 c. vegetable roots and onion
- 2 Tbsp. tomato puree or 2 tomatoes
- 1 Tbsp. vinegar
- 1 Tbsp. sugar
- 1 Tbsp. boiled butter
- bay leaf
- salt and pepper
- potatoes
- 1 Tbsp. flour
Directions

1Prepare a meat stock.

2Wash and shoestring the beets.

3Add 1 cupful of hot meat stock, vinegar, tomato puree and boiled butter.

4Bring to a boil, turn the heat down, cover and simmer for 1 to 1 1/2 hours; stir every 15 to 20 minutes.

5Shoestring and saute the carrots and parsley; add onion and continue to saute, then add to the beets.

6Cook for 10 to 15 minutes.

7Stir in the sugar.
