- 1 1/4 c. beet liquid (drained from canned beets)
- 3/4 c. tomato juice
- 1/4 tsp. onion powder
- 1/4 tsp. salt
- 1 Tbsp. lemon juice
- 1/4 c. plain, low-fat yogurt
Directions

1Mix all ingredients except yogurt together.

2Chill 2 to 3 hours in a covered jar.

3Serve in cocktail glasses, topping with 1 tablespoon of yogurt.
