  • 1 1/2 c. whole wheat flour
  • 1 tsp. baking soda
  • 3/4 tsp. cream of tartar
  • 3/4 c. honey
  • 1/4 c. orange juice concentrate
  • 1 to 2 Tbsp. water (as needed)
  • 1 tsp. vanilla
  • 1/8 tsp. orange extract
  • 1 (4 oz.) jar apricot baby food puree
  • 1 egg white (unbeaten)
  • 3/4 Tbsp. finely grated orange peel
  • 1 egg white, beaten
  • 1 recipe Cocoa Frosting
  • 1/2 recipe Vanilla Pudding

    Preheat oven to 325°.

    In large bowl, combine flour, baking soda and cream of tartar.

    Set aside.

    In medium bowl, mix honey, orange juice concentrate, water, vanilla, orange extract, orange peel, 1 unbeaten egg white and apricot puree.

    Stir into flour mixture until just blended.

    Gently stir in 1 lightly beaten egg white.
