  • 1 1/2 lb. carrots, peeled
  • 1 Tbsp. granulated sugar
  • 3 1/2 Tbsp. unsalted butter
  • 1/2 tsp. salt (plus more, if necessary)
  • 1 1/2 c. water
  • freshly ground pepper to taste
  • 2 Tbsp. dark brown sugar
  • 2 Tbsp. bourbon
  • 1 1/2 Tbsp. chopped fresh parsley (for garnish)

Directions

    Cut carrots diagonally into 1/4-inch slices.

    In heavy saucepan, combine carrots, granulated sugar, 1 1/2 tablespoons butter and 1/2 teaspoon salt.

    Add water and bring to a boil. Reduce heat to a simmer, cover and cook, until carrots are tender when pierced with a knife, 10 to 15 minutes.

    Drain carrots, taste and add more salt, if needed.

    Add pepper.
