Bourbon Carrots

- 1 1/2 lb. carrots, peeled
- 1 Tbsp. granulated sugar
- 3 1/2 Tbsp. unsalted butter
- 1/2 tsp. salt (plus more, if necessary)
- 1 1/2 c. water
- freshly ground pepper to taste
- 2 Tbsp. dark brown sugar
- 2 Tbsp. bourbon
- 1 1/2 Tbsp. chopped fresh parsley (for garnish)
Directions

1Cut carrots diagonally into 1/4-inch slices.

2In heavy saucepan, combine carrots, granulated sugar, 1 1/2 tablespoons butter and 1/2 teaspoon salt.

3Add water and bring to a boil. Reduce heat to a simmer, cover and cook, until carrots are tender when pierced with a knife, 10 to 15 minutes.

4Drain carrots, taste and add more salt, if needed.

5Add pepper.
