Bourbon Nut Bread

  • 8 eggs, separated
  • 1 lb butter
  • 13 cup Bourbon
  • 3 cups sugar
  • 3 cups flour
  • 2 teaspoons vanilla extract
  • 2 teaspoons almond extract
  • 1 cup pecans, chopped

    Whip egg whites until stiff.

    Add 1 cup sugar: set aside.

    Cream butter and rest of sugar until light yellow.

    Add egg yolks one at a time.

    Alternately add flour, bourbon, vanilla and almond extracts.

    Beat well.

    Stir in nuts.

    Fold in egg whites until smooth.

    Divide batter into 3 greased loaf pans.

    Bake at 325 for 1 - 1 1/2 hours until done.
