Boxing day soup

Ingredients

  • 1 left over vegetables (what ever you have)
  • 2 quart chicken stock , from cubes etc is fine
  • 2 potatoes , peeled and thinly sliced
  • 1 salt & pepper

    Chuck the vegetables into a saucepan, add stock.

    an English quart is 40 fl oz not 32!

    Put on lid , Bring to boil, lower heat and simmer for 15-20 minutes., stir regularly.

    Blitz with a hand held blender, or in a liquidiser, until as smooth as you like

    Bring back to boil, stirring constantly, it sticks , and burns, very quickly.

    Check seasoning and add salt and pepper to taste, I like lots of black pepper!

    You can drizzle in cream or creme fraiche, add croutons

    The soup pictured contained roast potatoes, candied sweet potatoes, peas, sweetcorn , carrots, brocolli and greens.

    You can make from scratch with fresh vegetables but it doesn't taste as good.

    Just ate the pictured bowl for breakfast, straight after I made the soup and photographed it !
