- 5 c. celery, cut into 1-inch pieces
- 1 small onion, sliced
- 2 tsp. cornstarch
- 1/4 c. milk
- 1 tsp. salt
- 1/4 tsp. pepper
- 1 c. grated Cheddar cheese
Directions

1Place celery and onion in a saucepan with 1/2 inch boiling water and salt.

2Cover and cook until celery is just tender-crisp, about 15 to 20 minutes.

3Drain, if necessary.

4Blend the cornstarch with the milk and add to the celery.

5Add salt and pepper.

6Cook, stirring, until slightly thickened.

7Sprinkle with the cheese; toss lightly until the cheese begins to melt.

8This is delicious as a luncheon or supper dish with crisp bacon.
