Braised Fish (Tunisia)

- 1 12 lbs cod or 1 12 lbs other white fish
- 1 tablespoon harissa
- 2 teaspoons olive oil
- 1 large onion, cut into rings
- 4 sun-dried tomatoes packed in oil
- 2 garlic cloves, sliced
- 1 cup white wine
- 12 teaspoon lemon juice
Directions

1Preheat oven to 375F.

2Clean and pat dry the fish.

3Cut into serving-size pieces.

4Rub fish with harissa.

5In an ovenrpoof skillet, heat the oil and add the onion.

6Saute until onion is transluscent.

7Add the tomato, garlic, lemon juice, and wine.

8Cook 5 minutes.

9Remove from heat.

10Add fish to skillet and spoon some sauce over the fish.

11Cover and cook in oven for 10 minutes or until cooked through.

12Remove from oven and let sit 2-3 minutes.

13Serve with couscous.
