Braised Pork Curry

  • 1 tbsp vegetable or peanut oil
  • 1 1/4 lb boneless pork ribs, cut into 3/4 inch pieces
  • 1/3 cup red curry paste
  • 2 tbsp brown sugar or palm sugar
  • 4 None green onions, sliced diagonally, plus extra to serve
  • 1 lb winter squash, peeled, cut into 3/4 inch pieces
  • 9 oz frozen or fresh green beans
  • 1 (13.5 oz) can coconut milk
  • 1 tbsp fish sauce
  • None None steamed rice and lemon wedges, to serve

Directions

    Heat a wok or large frying pan over medium-high heat. Add oil and swirl to coat. Cook pork for 2 mins, or until browned all over. Set aside.

    Add curry paste to wok along with sugar and onions. Stir-fry for 30 seconds. Return pork to wok along with any juices. Bring to a boil then reduce heat and simmer, covered, for 45 mins. Add squash and cook for 10-15 mins, or until squash and pork are tender. Stir in green beans, coconut milk and fish sauce. Cook until beans are hot.

    Serve pork curry with rice and lemon wedges. Sprinkle with extra green onions.
