Squash Casserole

  • 1 lb. yellow squash, sliced
  • 1 1/2 c. grated cheese
  • salt and pepper
  • 1 egg
  • 1/4 c. milk
  • 8 Ritz crackers, crushed
  • 1/4 stick margarine or butter

Directions

    Boil squash until tender. Drain and mash.

    Add grated cheese and butter, saving some cheese to sprinkle on top.

    Add beaten egg, milk, crushed crackers, salt and pepper.

    Bake in shallow dish at 350° until set and brown, about 20 minutes. Serves 4 to 6.

    Can add onion if desired.
