- 1 lb. yellow squash, sliced
- 1 1/2 c. grated cheese
- salt and pepper
- 1 egg
- 1/4 c. milk
- 8 Ritz crackers, crushed
- 1/4 stick margarine or butter
Directions

1Boil squash until tender. Drain and mash.

2Add grated cheese and butter, saving some cheese to sprinkle on top.

3Add beaten egg, milk, crushed crackers, salt and pepper.

4Bake in shallow dish at 350° until set and brown, about 20 minutes. Serves 4 to 6.

5Can add onion if desired.
