- 1 c. any bran cereal
- 1 c. skim milk
- 1 egg or 1/4 c. low-cholesterol egg substitute
- 1/4 c. oil
- 1/4 c. honey
- 1 1/4 c. whole wheat flour
- 2 tsp. baking powder
- 1/4 tsp. baking soda
- 1/2 tsp. salt
Directions

1Stir bran cereal and milk together; let stand 1 to 2 minutes. Add egg, oil and honey.

2Beat well.

3Stir remaining ingredients together in separate bowl.

4Add to liquid mixture and stir only until mixed.

5Pour into greased muffin tins.

6Bake at 400° for 20 to 25 minutes.
