Ingredients
- 5 1/2 to 6 c. bread flour
- 2 pkg. active dry yeast
- 2 tsp. salt
- 2 c. warm water (115~ to 120~)
- 1 slightly beaten egg white
- 1 Tbsp. water
Directions

1In large mixing bowl, combine 2 cups bread flour, yeast and salt.

2Add warm water and beat at low speed 30 seconds with mixer beaters.

3Scrape bowl constantly.

4Then beat at high speed 3 minutes.

5Stir in as much flour as possible using a wooden spoon to make a stiff dough that is smooth and elastic.

6Knead on floured surface by hand 5 to 10 minutes.

7Shape in a ball.

8Place in lightly greased bowl.

9Turn to grease surface.

10Cover and let rise in warm place until double in bulk (1 to 1 1/2 hours).

11Punch down and turn on lightly floured surface.
