  • 1 egg
  • 3/4 c. milk
  • 1/2 c. vegetable oil
  • 1 1/4 c. all-purpose flour
  • 1/3 c. sugar or molasses
  • 1 1/2 c. whole bran
  • 3 tsp. baking powder
  • 1 tsp. salt

Directions

    In large bowl, beat egg, milk and oil.

    Stir in remaining ingredients.

    Mix until flour is moistened (batter will be lumpy). Fill greased cupcake pan 3/4 full.

    Bake at 400° until golden brown, about 18 to 20 minutes.

    Remove immediately from pan. Serve hot with butter or margarine.

    Makes 12 muffins.
