Ingredients

  • 2 c. All-Bran
  • 1 c. 100% Bran
  • 1 c. boiling water
  • 2 eggs, beaten
  • 1/2 c. shortening
  • 1 1/4 c. sugar
  • 2 c. buttermilk
  • 2 1/2 c. flour
  • 2 1/2 tsp. soda
  • 1/2 tsp. salt

Directions

    Mix the 2 brans and boiling water; let stand.

    Mix eggs, shortening, sugar and buttermilk; add to bran.

    Sift flour, soda and salt.

    Fold into other mixture and stir well.

    Fill greased muffin tins 2/3 full and bake for 20 to 25 minutes at 350°.

    Makes 36 muffins.

    Batter may be kept in a covered container in refrigerator for 7 weeks and used as needed.
