Ingredients

  • 1 cup whole wheat flour (or 1/2 white and 1/2 whole wheat)
  • 1 cup bran flakes
  • 12 cup raisins (or other dried fruit)
  • 12 cup chopped nuts (optional)
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 12 teaspoon salt
  • 1 egg, beaten
  • 1 cup milk
  • 3 tablespoons safflower oil
  • 2 tablespoons honey
  • 2 tablespoons molasses
  • 1 teaspoon cider vinegar

Directions

    Preheat oven to 425 degrees F.

    Prepare muffin tins by lining with paper liners or spray with cooking spray.

    Combine first 6 ingredients (flour- salt) in a large bowl stirring with a wooden spoon.

    In a small bowl combine remaining ingredients (egg- vinegar).

    Set aside.

    Make a well in the center of the dry ingredients and add egg mixture.

    Stir with wooden spoon to combine.

    Spoon mixture into prepared muffin tin.

    Bake for 15-20 minutes or until done.
