  • 1 cup dried cranberries
  • 34 cup dark brown sugar

  • 4 tablespoons unsalted butter, melted and cooled
  • 14 cup molasses
  • 1 teaspoon vanilla extract
  • 2 cups whole wheat flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon

    Adjust oven rack to the middle position and heat the oven to 375 Degrees.

    Generously coat a 12-cup muffin tin with vegetable oil spray.

    Stir the buttermilk and bran together in a large bowl and let stand for 5 to 10 minutes to soften.

    Whisk in the applesauce, cranberries, brown sugar, egg, melted butter, molasses and vanilla.

    Whisk the flour, baking powder, baking soda and cinnamon together in a separate large bowl.
