  • 1 egg
  • 2 Tbsp. soft shortening
  • 1/4 c. sugar or molasses
  • 3/4 c. milk
  • 1 c. bran
  • 1 c. all-purpose flour
  • 2 1/2 tsp. baking powder
  • 1/2 tsp. salt

Directions

    Grease muffin tins.

    In a small bowl, combine egg, shortening, sugar, milk and bran.

    Sift dry ingredients together and add to liquid mixture.

    Just mix until dry ingredients are moistened. Fill muffin tins 2/3 full.

    Bake 20 to 25 minutes.

    Yields 12 muffins.
