Brandy Apple Cake

Ingredients: 4 c. raw apples, peeled and chopped into very small pieces (about 5 apples); 2 c. sugar; 1 shot brandy and liquor (fruit flavored brandy is desirable, but not required); 2 unbeaten eggs; 1 c. oil; 1 tsp. vanilla; 3 c. unsifted flour; 1 tsp. baking soda; 1 tsp. salt; 1 c. chopped walnuts; 1 c. sliced maraschino cherries (10 oz. bottle), drained

1 shot brandy and liquor (fruit flavored brandy is desirable, but not required)
2 unbeaten eggs
1 c. oil
1 tsp. vanilla
3 c. unsifted flour
1 tsp. baking soda
1 tsp. salt
1 c. chopped walnuts
1 c. sliced maraschino cherries (10 oz. bottle), drained

Combine and mix first 3 ingredients and let stand for 1 hour. Then add the remaining by hand.

Bake one hour at 350° in greased and floured loaf pans or 1 large tube pan.

(Makes 2 loaf pans or 1 tube pan.)

Can be wrapped and frozen for later use.
