Ingredients

  • 1 c. soft shortening
  • 1 c. sugar
  • 2 eggs
  • 1/2 Tbsp. vanilla
  • 2 c. (1/2 lb.) cut-up Brazil nuts
  • 2 1/4 c. flour
  • 1/2 tsp. soda
  • 1/4 tsp. salt
  • 1/2 c. coconut

Directions

    Cut each nut into 3 or 4 pieces.

    In mixing bowl, mix together shortening, sugar, eggs and vanilla.

    Sift together the flour, soda and salt; add to sugar mixture.

    Mix well.

    Stir in nuts and coconut.

    Drop by teaspoons onto baking sheets.

    Bake about 12 to 15 minutes in moderate (350°) oven.

    Makes about 6 dozen cookies.
