- 2 to 3 lb. pork shoulder roast
- 1 1/2 c. black turtle beans, soaked in water overnight
- 1 small onion, finely diced
- water added throughout baking to keep soup like
- salt and pepper to taste
- rice
Directions

1Preheat oven to 425°.

2Salt and pepper roast.

3Brown in oven for 30 minutes.

4Reduce oven temperature to 325°.

5Add beans to roaster with enough water to cover beans.

6Season with salt and pepper.
-
7Bake for approximately 2 hours, adding onion, more water and salt and pepper after first hour.

8Beans become soft in a soup like broth.

9Slice roast and serve beans over hot rice. Serves 6.
