  • 2 c. (slightly stale) bread or cake
  • 4 eggs
  • 1 1/2 c. milk
  • 1 tsp. vanilla
  • 1/2 c. sugar
  • stewed dried apricots or tart jelly or prepared pie filling

Directions

    Cut bread or cake into cubes and put into casserole dish.

    Beat 3 egg yolks plus 1 whole egg (reserve 3 egg whites).

    Add sugar, milk and vanilla.

    Mix well.

    Pour over bread, making sure all cubes are covered.

    Bake at 350° approximately 45 minutes or until set.

    Take out and cover with fruit.

    Beat egg whites until stiff, adding 2 teaspoons sugar.

    Cover fruit with this meringue and return casserole to oven for approximately 10 to 15 minutes or until meringue is golden brown.
