- 8 stale, white bread slices, cut in half
- 1/2 c. shredded coconut
- 3 c. milk
- 1/4 c. packed brown sugar
- 3 Tbsp. butter or margarine
- 3 eggs
- 1/2 tsp. vanilla
- dash of salt
Directions

1Preheat oven to 325°.

2Grease 10 x 6-inch baking dish. Arrange half of bread halves in bottom of dish; sprinkle with half of coconut.

3Top with remaining bread.

4Heat milk, sugar and butter.

5Beat egg, vanilla and salt.

6Pour milk mixture into eggs, stirring constantly.

7Pour mixture over bread; sprinkle with remaining coconut.

8Place filled baking dish into 9 x 13-inch pan and set on oven rack.

9Carefully pour boiling water into lower pan (1-inch).

10Bake 1 hour or until knife inserted in center comes out clean.
