  • 1 pound bulk sausage
  • 1 c. butter
  • 1 1/3 c. minced onion
  • 1 1/4 c. minced celery
  • 4 quarts. soft bread crumbs
  • 1 c. chicken stock
  • 1 tbsp. salt
  • 1/2 teaspoon pepper
  • 1 tbsp. poultry seasoning
  • 2 tbsp. minced parsley
  • 1 sm. jar mushrooms

    Cook sausage and combine with remaining ingredients.

    This makes a moist stuffing.

    For a dry stuffing use dry bread crumbs.

    Makes sufficient for a 10 lb.

    bird with sufficient left over for 5 to 6 stuffing molds, unless your family likes it as much as mine, then I double the recipe for 20 to 25 people.
