- 6 (6-inch) flour tortillas
- 2 c. frozen egg substitute
- 1/4 c. water
- 3/4 c. plus 2 Tbsp. taco sauce
- 2 Tbsp. peppers, diced
- 1/4 tsp. salt
- dash of pepper
- 1/2 c. reduced fat Cheddar cheese
Directions

1Combine egg, water, 2 tablespoons taco sauce, peppers, salt and pepper.

2Coat nonstick skillet with Pam.

3Cook egg mixture in skillet, stirring frequently.

4Warm tortillas.

5Top each tortilla with 1 tablespoon taco sauce and cheese along with eggs.

6Place seam-side down on platter.

7Top with remaining sauce and cheese. Serves 6.
