- 1 c. hash brown potato mix with onion
- 2 c. hot water
- 6 (8-inch) flour tortillas
- 6 eggs, well beaten
- 1/2 lb. pork sausage, cooked, crumbled and drained
- 1/2 tsp. salt
- pepper to taste
- 2 Tbsp. butter or margarine
- 3/4 c. shredded Cheddar cheese (optional)
- picante sauce (optional)
- sour cream (optional)
Directions

1Combine hash brown potato mix and water.

2Stir well.

3Let stand covered 15 minutes.

4Drain.

5Heat tortillas in foil in 350° oven for 10 minutes.

6Combine hash browns, eggs, sausage, salt and pepper.

7Stir well.

8Melt butter in large skillet.

9Add egg mixture.

10Cook over low heat, stirring gently, until eggs are soft. Fill each tortilla with 1/2 cup egg mixture and cheese, picante sauce and sour cream if desired.

11Roll up, placing seam side down. Makes 6.
