- 1 pkg. (10) tortillas (wheat or flour)
- 1/2 lb. Italian sausages
- 10 eggs, beaten with salt to taste
- some Cheddar cheese, shredded (if desired)
Directions

1Fry the Italian sausage and tear into small pieces.

2Beat eggs and salt.

3Add sausage and cheese.

4Pour into hot skillet with just enough oil to scramble eggs.

5Stir constantly until done. Set off heat.

6Lay out the tortillas and spoon about 1 scrambled egg on each.

7Fold ends over, then roll up into a burrito.

8Make ahead and refrigerate until needed.

9Just heat in microwave about 10 to 15 seconds.
