Ingredients
- 4 Tbsp. butter
- 6 to 8 chopped green onions
- 1 Tbsp. dried chili pepper flakes
- 1 lb. pork sausage (Bob Evans)
- 15 or more thawed Tater Tots
- 1 doz. flour tortillas
- 6 eggs
- 1 jar salsa (desired temperature)
- shredded Cheddar cheese (as desired)
- jalapeno peppers (optional)
Directions

1Brown sausage in medium frying pan; drain well.

2Set aside. Saute onions in butter in large frying pan.

3Add chili flakes and Tater Tots.

4Mash Tater Tots, add sausage and mix well until hot. Crack all eggs on top of mixture and scramble until cooked well done.

5Do not burn eggs.

6Serve in heated bowl with warmed tortillas on side with salsa, shredded Cheddar cheese and jalapeno peppers.
