Breakfast Burritos

Ingredients

  • 4 Tbsp. butter
  • 6 to 8 chopped green onions
  • 1 Tbsp. dried chili pepper flakes
  • 1 lb. pork sausage (Bob Evans)
  • 15 or more thawed Tater Tots
  • 1 doz. flour tortillas
  • 6 eggs
  • 1 jar salsa (desired temperature)
  • shredded Cheddar cheese (as desired)
  • jalapeno peppers (optional)

Directions

    Brown sausage in medium frying pan; drain well.

    Set aside. Saute onions in butter in large frying pan.
  3. 3
    Add chili flakes and Tater Tots.
  4. 4
    Mash Tater Tots, add sausage and mix well until hot. Crack all eggs on top of mixture and scramble until cooked well done.

    Do not burn eggs.

    Serve in heated bowl with warmed tortillas on side with salsa, shredded Cheddar cheese and jalapeno peppers.
